New Recipe
So in keeping up with my menu plans and thus my agreement with Alisha I made BBQ Roasted Salmon for dinner last night. This one was from Robin Miller on the Food Network and it's a keeper. It was a bit on the tangy side but the kids still ate it and agreed it was good. The recipe follows for those daring souls. I have also made Nachos (not very photo worthy) this week. Tonight is Creamy Swiss Steak-Stay Tuned.
Barbecue Roasted Salmon
cooking spray
1/4 cup orange juice
2 Tablespoons fresh lemon juice
2 Tablespoons light brown sugar
4 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons finely grated lemon zest
1/2 teaspoon salt
Pinch of cayenne pepper
4 (6oz) salmon fillets
In a small bowl mix together everything but the cooking spray and Salmon. Coat a baking dish with cooking spray add the Salmon and then pour sauce over salmon turning the salmon to coat. Bake in a 400 degree oven until Salmon flakes easily with a fork. 15-20 minutes
* I used a basting brush half way through to put more sauce on the fish and served it with Rice and Corn. Enjoy.
