Just For Fun Cards and Dinner

Just a few cards made purely for fun. I had to drive between the kids' soccer practices today so dinner was quick but satisfying. Another new recipe but one I will be making more often. Zesty Porcupine Meatballs served with buttered rice and peas, recipe follows. Enjoy

Zesty Porcupine Meatballs (courtsey of Allrecipes)

1 egg
2 (10.75oz) cans condensed tomato soup
1/4 cup instant rice
1/4 chopped onion
1 TBS. chopped fresh parsley
1 tsp. onion salt
1/4 tsp. ground black pepper
1 pound lean ground beef
1/4 cup Worcesterhire sauce

Lightly beat egg with a fork, then add a heaping tablespoon of the soup and mix lightly. Mix in rice, onion, parsley, onion salt, and pepper. Stir in the ground beef and mix well with hands. Form mixture into 1 1/2 inch round meatballs.

Coat a large skillet with cooking spray and heat over medium heat. Add meatballs and cook until brown on all sides.

Combine remaining soup with Worcestershire sauce, stir until smooth, then spoon over meatballs. Cover with a lid and simmer for 20-30 minutes, stirring every few minutes.
Yields 5 servings.

I didn't remember to buy parsley at the store but it really didn't need it.

Cute, cute cards! Did you draw on the flowers to get the design? Is that the flower from Looks Like Spring?
