Holiday Treats

My friend Angela had told me about these cookies that were a family tradition and they sounded good. I saw a similar recipe in a magazine and asked Angela for her recipe. She calls them Peanut Butter Balls, the magazine called them Buckeye Balls but whatever their name they are YUMMY! Here is the recipe I followed. (Thanks Angela) I suggest making a double batch as they go quickly.

1/4 cup butter or margarine
1/4 cup brown sugar
3/4-1 cup powdered sugar
1/2 cup creamy peanut butter
1 tsp. vanilla
12 oz. chocolate chips (I used semi-sweet)
2 Tbs. shortening

Microwave butter and brown sugar 1 1/2 minutes until melted stir in 3/4 cup powdered sugar,peanut butter, and vanilla. Add more powdered sugar as needed to stiffen the mix but just until easily shaped into balls. Too much and they dry out and fall apart. After all the dough is rolled into balls chill. In a double boiler melt chocolate chips and shortening. Using a toothpick dip the balls into the chocolate and place on wax paper to set and chill. Use the toothpick to fill in the holes with chocolate if desired. I didn't have a double boiler so I used a glass bowl and the microwave to melt the chocolate just be sure to check it and stir often so it doesn't burn.
