Super Duper Dinner

Tonight for dinner I made Herbed Pork Tenderloin and Super Stuffed Baked Potatoes, It was one of the best meals I think I have ever made. The meat was juicy and flavorful and the topping on the potatoes was very tasty. I also finished the treat pouches for my daughter's first grade Halloween Party, they are time consuming but adorable. Here are tonight's recipes.

Herbed Pork Tenderloin
1/3 cup olive oil
2 tsp. minced garlic
1 tsp. seasoned salt
1 tsp. ground black pepper
2 tsp. Dijon mustard
5 tsp. dried Italian seasoning
1 tsp. onion powder
2 pork tenderloins (1 lb. each)
Combine first 7 ingredients in a small bowl.
Place tenderloins in a baking dish and drizzle with herb dressing
Bake, uncovered, at 375 degrees for 45 min.
Let rest 5 minutes before slicing.

Super Stuffed Baked Potatoes
6 large baking potatoes
1/3 cup butter, softened
3 green onions, sliced
1/4 cup mayonnaise
2 Tbs. cooked bacon, crumbled
1 cup shredded cheddar cheese
Pierce potatoes and place on microwave safe plate, cook for 25 minutes turning once.
Meanwhile in a small bowl combine butter, mayonnaise, onion, and bacon; set aside
When potatoes are cooked cut an X on the top of each potato and fluff pulp with a fork. Divide butter mixture equally onto the tops of the potatoes and top with the cheddar cheese.

That does sound yummy (except I don't like pork). I might have to try those potatoes - yum!
